Vegan shortcrust pastry
180 g of flour 00
50 g of brown sugar
5 g of baking powder
50 g of sunflower oil
50 g of rice milk
1 pinch of salt
Preheat the static oven to 180 °.
Pour the flour, sugar and yeast into a bowl.
Add a pinch of salt.
Mix well and add the oil and milk.
Stir with a spoon and knead with your hands.
Roll out the dough and flatten it with a rolling pin.
If you use the dough for a tart or a cake, arrange it in the pan. If you use it for cookies, make cookie cutters and arrange them on a baking sheet.
For cookies, the cooking time will be 20 minutes. For a tart or a cake, however, it will take about 40 minutes.
You can use 0 or wholemeal flour. It will be fine anyway.
You can replace sunflower oil with olive oil. The flavor will be just a little more intense. Alternatively, you can use another type of seed oil.
You can replace brown sugar with white sugar or with brown sugar.
You can use any other plant-based milk (soy, oat or almond - I've never tried it with coconut milk but I think it's good anyway).
